Ben's Peanut Tofu

Recipe by my friend and ex-co-cat-dad Ben.

Ingredients

Core

  • Firm Tofu
  • Brown Rice
  • Neutral Oil
  • (Optional) Sesame Oil

Veggies (pick a few)

  • Bell Peppers
  • Chili Peppers
  • Onions of any kind
  • Sliced Carrots
  • Broccoli

Sauce

  • Soy Sauce, 1 part
  • Peanut Butter (We prefer crunchy), 3 part
  • Chili Garlic Sauce, 0.5ish part
  • Rice Vinegar, 0.5ish part
  • Sweetener (I prefer a spicy honey, maple syrup works fine), 0.5 part

Toppings

  • Scallions
  • Toasted Unsalted Peanuts

Prep

  1. Heat two big pans with oil, and start rice cooker.
  2. In one pan add cubed tofu, the other start getting the veggies going.
  3. In a bowl, combine sauce ingredients and mix heavily to break up peanut butter. If the sauce is too thick, feel free to add a splash of water.
  4. When the tofu is mostly cooked, mix in the veggies and add sauce.
  5. When sauce thickens, turn off heat and serve over rice with optional toppings.

Jaden's Mulled Wine

  • Bottle of dryish red wine
  • Cinnamon sticks (1-2/bottle of wine)
  • Cardamom pods
  • Juice of 1 large orange
  • Whole cloves (best if stuck into orange wheels to avoid floaties)
  • Ginger root sliced thin
  • All-spice
  • Honey/Maple Syrup/Brown Sugar to taste

Simmer until yummy
